Sole Ceviche with Yellow Chili & Passionfruit – sole, cut in cubes, cured in an emulsified mix of lemon and lime juice, ginger, yellow chili, passionfruit, salt, pepper, and olive oil; brunoise of tomato, red onion and cucumber, chopped limo chliies and cilantro; homemade wontons, fried and dusted with salt and smoked chili.
Ceviche de Lenguado con Ají Amarillo y Maracuyá – lenguado, cortado en dados, curado en una mixtura emulsificada de jugos de limón y lima, jengibre, ají amarillo, maracuyá, sal, pimienta, y aceite de oliva; daditos de tomate, cebolla morada, y pepino; ají limo y cilantro picado; wontons caseros, frito y espolveado con sal y merquén.
