Grilled eggplant; salmon poached in soy sauce and ginger; croutons; radishes pickled in rice vinegar with coriander seed and black pepper; tonnato sauce (puree of mayonnaise, tuna, gochujang, capers, anchovies, lemon zest and juice); crispy salmon skin with salt and gochugaru; chives; radish sprouts.

Berenjena a la parrilla; salmón rosado pochado en salsa de soja y jengibre; picatostes; rabanitos encurtidos en vinagre de arróz con semillas de coriandro y pimienta negra; salsa thoné (puré de mayonesa, atún, gochujang, alcaparras, anchoas, ralladura y jugo de limón); piél de salmón rosado crocante con sal y gochugaru; ciboulette; brotes de rabanitos.
