2022 Menu #2

A full night, with ten folk at the table. And the first time in a long time we’ve had an “all American” night, though that’s just by chance. Folk from Chicago, Savannah, and New York.

Sole Tiradito – Thin slices of fresh sole served over a pool of yogurt and grana padano cheese. Drizzled with lemon infused olive oil, and topped with crushed toasted pistachios, capers, sea salt, and cracked black pepper.

Entrevero Folie Rosé, N.V., Mendoza – 100% Malbec from Lujan de Cuyo.

Chilled Tomato-Gin Soup – One of our longtime favorites. Sautéed onions, garlic, and potato, then cooked in vegetable stock with togaroshi chili powder, and then pureed with gin, tomatoes, basil, brown sugar, and cream. In the center an iced sour cream flavored with yellow bell pepper, cucumber, Chinese mustard powder, and black pepper. Toasted sunflower seeds.

La Liga de Enologos “El Regreso de Dos Cepas Olvidadas” 2020 – blend of Semillon and Chenin Blanc sourced from vineyards in Eastern Mendoza, Valle de Tulum (San Juan), and Valle de Cafayate (Salta).

Palm Heart Tart – Another longtime favorite here. Sour cream crust topped with a merquén chili spiced heart of palm and feta cheese tart (usually we use manchego cheese, but I couldn’t find any this last week). Served warm over balsamic vinegar glaze and topped with a radichetta, walnut, feta cheese, and garlic pesto.

Familia Scotti “Gran Delirio” Rosé 2021 – pink blend of 80% Pinot Gris, 10% Cabernet Franc, and 10% Sauvignon Blanc, from vineyards in Valle de Uco, Mendoza.

Osso Buco – Although tasty, not the prettiest presentation, which needs some work. Osso buco braised in beef stock until tender with rocoto and aji amarillo chilies, onions, and garlic. The braising liquid is then reduced and thickened. Served over a saute of red, green, and yellow bell peppers, onions, and tomato, with a splash of soy sauce. On the side, Andean papines roasted in olive oil and sea salt.

Finca Las Moras “Los Intocables Rum Barrel Blend” 2020 – blend of Syrah and Merlot, aged one year in used rum barrels. Grapes sourced in San Juan province.

Lemon Kiss Tart – A re-designed version of our classic lemon tart, served with cactus pear syrup and dusted with nutmeg and powdered sugar.

Familia Zuccardi “Malamado” Viognier, N.V. – sweet, late harvest wine, 100% Viognier, from Mendoza.
