An All-American night, with five duos from different parts of the country.

Sea Bass & Calamari Tiradito – Sashimi slices of sea bass and quickly poached, diamond cut calamari, lightly cured in lime and orange juices with a touch of cucumber, ginger, szechuan peppercorn, and jalapeño. Garnished with red onions, fried corn, and cilantro.

Napa Cabbage Soup – The soup base is a puree of cooked Napa cabbage, onion, garlic, and potato, with a touch of white wine and yogurt, and spiced with merquén chili. To that, cooked white beans and spicy longaniza sausage are added, and the soup is finished with a good amount of green onions.

Yacachuya “Coqueña” Torrontés, 2021

Cherry Tomato Tart – A sour cream, flour, and butter crust topped with a feta cheese quiche filling. On top of that, a mix of red, yellow, and black cherry tomatoes, red onions, and pickled peppers, all tossed with a little salt, cumin, honey, and olive oil. Baked in the oven, cooled, sliced, and served over a black olive and sun-dried tomato puree, and garnished with parsley and cilantro.

Trivento White Malbec Reserva 2021

Sous Vide Chicken, Chickpea Stew Stuffed Globe Zucchini – Chicken thighs rubbed with olive oil, thyme, and baharat. Sous vide cooked for three hours at 74C. Browned in a skillet. Topped with a zucchini cream sauce (zucchini, red onion, garlic, cumin, coriander, white wine, chicken stock, cream), and fresh thyme leaves. Stewed chickpeas with garlic, walnuts, parsley, tomato, saffron, and lemon juice, stuffed into hollowed out globe zucchini and then baked in the oven.

El Esteco “Don David” Malbec-Tannat Reserva 2020

Mexican Corn Pudding, Popcorn Gelato – My inspiration from a traditional pan de elote, a baked pudding of corn, eggs, condensed milk, butter, and cinnamon, over a caramelized base of brown sugar and pineapple. Royal icing flavored with mole poblano spices (cocoa, banana, peanut, cinnamon, allspice, clove, black pepper, cumin, and chipotle). Classic gelato recipe infused with the flavor of just popped popcorn and butter.
